So, let’s flip the script. This week, I’ve got a Sweet Potato Overnight Oats recipe that tastes like sweet potato pie in a jar; but it’s plant-based, balanced, and perfect for busy mornings.

🍠 Weekly Recipe Line Up: Sweet Potato Overnight Oats

Sweet Potato Overnight Oats

Ingredients (1 serving):

½ cup Rolled Oats

1 tbsp Chia Seeds

1 tsp Ground Cinnamon

¼ tsp Ground Nutmeg

¼ cup pumpkin purée

¼ tsp Almond Extract

1tbs Maple Syrup

1 cup Plant Milk

Garnish: 1 Tbs Chopped Pecans

Directions:

  1. Mix all ingredients in a mason jar or container.
  2. Stir well, cover, and refrigerate overnight.
  3. In the morning, give it a stir and top with pecans
