Cozy + Plant-Based + Simple ✨


Hey Foodie Fam,

If you’re like me, that first crisp breeze instantly makes you crave something warm, cozy, and comforting. The good news? You don’t need heavy, cream-based dishes to get that comfort-food feeling.

This week, I’m sharing one of my go-to recipes: a Barley & Lentil Soup that’s budget-friendly, full of protein and fiber, and perfect for meal prep.

✨ Weekly Recipe Line Up:

Barley & Lentil Soup

Ingredients:

1 tbsp olive oil

1 medium onion, diced

4 carrots, chopped

3 celery stalks, chopped

4 cloves garlic, minced

1 cup green or brown lentils, rinsed

½ cup Barley, rinsed

1 can (15 oz) diced tomatoes

8 cups veggie broth

1 tbs Onion Powder

1 tbs Garlic Powder

3 bay leaves

2 tsp Salt

1 ½ tsp Black Pepper

1 ½ tsp Smoked Paprika

1 tsp Cumin

Directions:

  1. Sauté onion, carrots, and celery until softened.
  2. Add garlic, barley, lentils, tomatoes, and broth. Stir well.
  3. Drop in bay leaf and spices, bring to a boil, then simmer 30–35 minutes until lentils and barley are tender.
  4. Remove bay leaf, serve hot.

Optional toppings: fresh parsley, a squeeze of lemon, or a drizzle of olive oil.

Pro-Tip: Boost the Flavor

Add a splash of balsamic vinegar or lemon juice at the end; it brightens the soup and makes the flavors pop.

Drink a full glass of water before meals. Sometimes our bodies confuse thirst for hunger, and this little habit helps with portion control.
